Ingredients

For your pumpkin bundt cake, you will need two and a ½ cups of sugar, one cup of canola oil, three large eggs at room temperature, three cups of all-purpose flour, two teaspoons of baking soda, one teaspoon of ground cinnamon, one teaspoon of ground nutmeg, ½ teaspoon of salt, ¼ teaspoon of ground cloves, one can (15-ounces) of pumpkin, and confectioner’s sugar.

How to Make the Cake

Begin by preheating the oven to 350 degrees Fahrenheit. Then, in a large bowl, mix sugar and oil until combined. Beat the eggs in one at a time. Combine your flour, baking soda, cinnamon, nutmeg, salt, and cloves, and mix until all the dry ingredients are well acquainted. Add dry ingredients to the egg mixture with the pumpkin.

Next, transfer the batter into a greased 10-inch fluted tube pan. Bake for 60 to 65 minutes or until a toothpick comes out clean. Let cool for 10 minutes before inverting on a wire rack. Remove the pan and top with a dusting if the confectioner’s sugar. Enjoy!

There are two types of cinnamon: Ceylon and cassia. Cassia is a bolder, spicer cinnamon that is used in baking and is typically just labeled cinnamon. Ceylon is used in ice creams and simple sauces since it has a delicate flavor. Canola oil is used in this cake recipe because it is high in monounsaturated fat which helps decrease blood cholesterol levels and is low in saturated fat. Olive oil has similar benefits and could be used as well.
